Wild Sarvis Berry

Cast Iron Coffee Cake

{Dairy Free}
Preheat Oven 350F
Simmer the berries on medium heat until bubbly and set aside:
    1 1/2 Cups Wild Sarvis Berries
   1/4 Cup Water
    2 Tablespoons Sugar


Sift together dry ingredients in a bowl:
    1 1/2 Flour
    1/2 Cup Sugar
    1 Teaspoon Baking Soda
    2 Teaspoons Cream of Tartar
Whisk togehter wet ingredients in a separate bowl:
    1/4 Cup Coconut Oil Melted
    2 Teaspoons Vanilla Extract
    1 Egg
    1/2 Cup Coconut Milk
Combine the wet and dry ingredients.
Spoon half of the dough on the bottom of cast iron skillet.  Next layer with the wild simmered sarvis berries.  Add small spoonfuls of all the remaining dough on top of the berries.
With a fork in a separate bowl combine the crumb topping until it becomes coarse crumbs:
    1/4 Cup Flour (Substitute with Almond Flour for a Nutty Taste)
    1/4 Cup Sugar
    2 Tablespoons Coconut Oil
Sprinkle on the crumb topping as the final layer.


Bake at 350F for 40 minutes.
